Since Thanksgiving is just a week away, here is a Thanksgiving turkey recipe from scratch along with step-by-step cooking instructions:


  • 1 whole turkey (12-15 pounds)
  • 1 cup unsalted butter, softened
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1 tablespoon dried sage
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 tablespoon paprika
  • 1 onion, quartered
  • 1 lemon, halved
  • 4 cloves garlic, peeled
  • 2 cups chicken or turkey broth
  • 1 cup dry white wine (optional)


1. Prepare the Turkey:

  • Preheat your oven to 325°F (165°C).
  • Remove the giblets and neck from the turkey cavity. Rinse the turkey inside and out and pat it dry with paper towels.

2. Make the Herb Butter:

  • In a bowl, mix the softened butter with olive oil, dried sage, thyme, rosemary, paprika, salt, and black pepper. This creates a flavorful herb butter.

3. Season the Turkey:

  • Gently separate the turkey skin from the meat without tearing it.
  • Rub half of the herb butter mixture under the skin, spreading it evenly.
  • Rub the remaining herb butter over the outside of the turkey.
  • Season the inside of the turkey cavity with salt and pepper.
  • Place quartered onion, halved lemon, and garlic cloves inside the cavity for added flavor.

4. Truss the Turkey:

  • Truss the turkey by tying the legs together with kitchen twine to ensure even cooking.

5. Roasting:

  • Place the turkey on a roasting rack in a large roasting pan.
  • Pour chicken or turkey broth into the pan to keep the turkey moist.
  • If using, pour dry white wine over the turkey for additional flavor.

6. Cooking Time:

  • Roast the turkey in the preheated oven. Calculate the cooking time based on the weight of the turkey, usually around 15 minutes per pound. A meat thermometer should read 165°F (74°C) in the thickest part of the thigh.

7. Basting:

  • Baste the turkey with pan juices every 30 minutes to ensure a golden and flavorful skin.

8. Resting:

  • Once cooked, remove the turkey from the oven, tent it with foil, and let it rest for at least 20-30 minutes. This allows the juices to redistribute, ensuring a juicy turkey.

9. Carving:

  • Carve the turkey and serve with your favorite Thanksgiving sides.
